- To fill a big stock pot, dice tomatoes into smaller 1/2′′ to 3/4′′ pieces.
- In a large non-reactive saucepan, combine all of the ingredients (use stainless steel, not aluminum). Put the ingredients in a cast iron saucepan if you’re short on iron. Bring to a simmer and boil, uncovered, for approximately 25 minutes, or until the mixture is fully soupy.
- Using a strainer, chinois, or food mill, strain the mixture. Allow to cool fully.
- Refrigerate when not in use. In the refrigerator, it will keep for approximately a week.
