Whether you’re an experienced fermenter or a total novice, I’ve found that keeping the procedure as easy as possible works best for this recipe. Some recipes call for whey, which you may want to try once in a while for variety.
For me, that means making my Recipe for beet kvass with wild fermentation: salt and Water that has been filtered.

Here’s how to create my favorite whey-free beet kvass…

- Beets should be sliced into bigger slices (not too small). You want a third of the way full of beets in your jar.
- Fill the jar with approximately an inch of thinly sliced onions.
- Then, roughly an inch of shredded cabbage should be added to the container.
- Add salt
- Fill the container with purified water.
- Fill the jar almost all the way to the curved section of the jar’s shoulder.
- Close the lid securely.
- Allow the jar to ferment for 3-5 days before transferring it to the refrigerator.
- When the water is gone, refill it and continue the procedure two more times.
- Once the beets have become pale, start again with a fresh set of Ingredients.
How to make the greatest beet kvass you can
Because we like this recipe, I’ve gathered a few pointers along the road to help you prepare the greatest beet kvass possible.
- It’s important to pay attention to the components you utilize. Eating inexpensive, chemical-laden grocery store food will not provide the same outcomes as eating clean, organic meals. This includes the water you use and the salt you use.
- The author recommends refreshing the water 1-2 times throughout the book. That, in my opinion and that of my family, dilutes the flavor too much. When the water is just replaced once.
